I've got a dumb cooking question. There are tons of websites for cooking first-time-round recipes, but not for left-overs. I have half a pork loin (that I actually cooked so that it didn't turn out tough or anything! yay me! I did it right this time!). But what can I do with it? Can I chop it up and put it into a casserole? But what kind? A variation of a shepard's pie? Or something else? Tacos? Would it make an okay taco? I'm having an utter and complete brainfart here. I'll probably make something with it tomorrow. Soup? What kind of soup? Argh!

Pork and bean soup using the pork rather than a hamhock.

Pork Chili verde

Slice some up, toss barbecue sauce on it and you have barbecued pork sandwiches

I think it would make an AWESOME taco or sort of burrito if you pull it into strings like they do for carnitas. Sprinkle on some lime juice, maybe add cilantro or green salsa, or whatever you guys like.

Almost any leftover meat can be mixed with a couple of cans of beans, some chopped onion + chili powder and made into a chili, IME.
