I need a food icon

I am NOT a foodie. God help me. I think foodies are like the woman who hosts The Splendid Table on NPR: obnoxiously smug about their food and its preparation. People. It's FOOD. Not the Sistine Chapel.

Anyhow, that said, I'm kind of excited about tonight's dinner-- I marinated three chicken breasts in fresh lime juice (or a hybrid lime-lemon juice) and they're now roasting in the oven. When they're done, they will be cut up into slices of meat, and they're going to go on a couple plates of quesadillas. The kids don't want the chicken in their quesadillas, but that's okay. They actually sounded *interested* in lime marinated chicken.

And I have some fresh cilantro left over from last night's dinner, so I'll stick plenty of that in the adult's quesadillas. Mmmm. Cilantro.

Oh, yes, and rice. Must cook up some rice.

*Love* homemade quesadillas. It's one of my 'OMG I'm hungry and I want to eat NOW' meals. Toss the chicken breasts on the grill and by the time I've dug out everything else and put ice in glasses and so forth, the chicken's done and we're off!

Oh, they're awesome.

I found a magazine at the grocery store last week put out by Better Homes and Gardens--5 ingredient recipes.

I made one of them, a fish dinner. The fish had a butter/cilantro/lemon juice "sauce" that was to die for. Even my mother, who can't taste much anymore (head injury) could taste the cilantro. It was really really good.

I haven't cooked fish in ages. But then, I've been buying family sized packages of hamburger and chicken, then breaking it down into either serving sized or meal sized (the hamburger) portions and freezing them.

We've been eating a lot of hamburger and chicken.

And beans. Lotsa beans.:-)
