OMG Curried Chicken Orgasm!
May. 23rd, 2006 03:05 pmI made this last night from "Everyday Food" magazine, issue number 33 with the shrimp dish on the cover and a light blue colored masthead.
Here it is: (page 42)
1 small red onion cut into .5 inch chunks
1 green apple quartered, cored and cut into 1 inch chunks
2 garlic cloves, sliced
2 tablespoons ketchup (for color, more or less)
2 teaspoons Curry
coarse salt and pepper (I just used the table varieties)
4 boneless/skinless chicken breasts (about 6oz each)
1/4 cup of lowfat plain yogurt
1/4 cup of fresh chopped cilantro (this is *important*!)
in a 2 quart microwave safe dish withlid, stir together all the ingrediants except the chicken. Add in a 1/4 water, season with salt and pepper
add chicken, season with the salt and pepper
cover and cook in microwave for five minutes. Turn chicken over and zap on high for five more minutes or until the clucker is cooked through
lift chicken breasts/bits from the dish and put on plates
mix in the 1/4 cup of yogurt to the mixture in the dish, then spoon it over the chicken on the plates, then sprinkle the FRESH cilantro over the whole fragrant wonderful mess. Rice is optional, but can be good.
Honest to god, this is the Best and Easiest Curry Chicken recipe I've ever seen. And it's is SO GOOD!
